Zucchini loaf is a great way to use up that glut of zucchini's you have grown.
I always double this recipe and add in as may zucchinis as I like. For this one I used five medium sized ones. It is very similar in taste to a banana loaf without the banana.
Great for school lunches, or morning tea.
The best thing about this recipe is that you don't need to squeeze out the moisture from the zucchini, making the loaf moist and meaning less work to do.
