We aim to provide hands on learning in a supportive environment to encourage resilience, and problem solving, while providing opportunities to learn intrinsically. No Bake Lemon Slice

This recipe has been in many families for years and originates from the 50’s. It is quick and easy to make and doesn’t need cooking. Get the kids involved in crushing the biscuits, mixing and squashing the mix into a slice tin. It is nice to make when lemons are in season.
Ingredients:
250g melted butter
1 can sweetened condensed milk (397g)
2 packs (500g) plain biscuits like arrowroot or wine biscuits crushed into crumbs
2 cups coconut
Grated rind of two lemons
For the icing:
170g Icing Sugar
2 tbsp Lemon Juice
Mix together the dry ingredients in a bowl - biscuit crumbs, coconut and lemon rind.
Melt together the butter and condensed milk in a pot over a low heat.
Combine wet and dry ingredients in the bowl and mix until well combined.
Press into a greased/lined sponge roll tin and place in the fridge to harden up (overnight is best).
Ice when firm and slice into squares, rectangles or triangles
Tips And Tricks
Can be stored in the freezer for another day. Just add the icing when you need it.
